I first made these because I was looking for a healthy recipe to use up some dried apples that were given to me (in abundance). So I flipped through my favourite muffin book, opted for something with no sugar, and tweaked the recipe as I always do to make it my own. Out of oven emerged these muffins.

They are dense, chewy, and not-too-sweet. Lovely with some cheddar cheese, and perfect for a snack on a busy day. My little grandchildren (2 yrs old) love them!

Note: Since I have so many of these apple pieces, you’ll probably find that I post a lot of random recipes with dried apples in the weeks to come… Granola, cookies, muffins etc… Here I come! (This picture only shows 1/2 if what I was given… Crazy!)


Apple Oatmeal Muffins
Makes 12 muffins

Ingredients:
1-1/2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground ginger
1 c. cooked oatmeal
1/2 c. liquid honey
1/2 c. kefir (or yogurt)
1-1/4 c. dried apples
Shredded unsweetened coconut, optional

Directions:
(1)  In a medium-large mixing bowl, sift together the flour, baking powder, baking soda, salt, and ginger. Whisk to combine, make a well in the centre, and set aside.

(2) In a separate bowl, mix together the oatmeal, honey, kefir, and dried apples. Pour into the well in the centre of the dry ingredients, and mix until just combined (do not over-mix).

(3) Spoon into greased or lined muffin tins, sprinkle with coconut, and bake in a 375 degree F oven for 15-20 minutes, or until a toothpick inserted into the centre comes out clean. Cool on wire racks.

Tip: If you want these muffins a little sweeter, you can sprinkle a bit of brown sugar and cinnamon on top instead of coconut, or just use sweetened coconut instead of the unsweetened.
