This recipe is a family favourite, and it is a great go-to meal for busy days. It’s easy to serve to a crowd, and always gets great reviews! My oldest daughter Rachel runs a Dance and Arts Camp every year in the Niagara region (check out the link if you’re interested!), and I usually go to do the cooking – this is always the dinner meal for day #1, and it’s always well enjoyed.
This recipe can be used for taco salad (as I have), or you can also use it for tacos, burritos, or whatever. If you’re looking to save a bit of money, I sometimes do half beans, half meat – Or add some beans to bulk the mixture up a bit, and serve more people with less expense.
If you’ve been looking for a homemade alternative to buying those expensive taco seasoning mixes, this is your winning combination. My daughter Naomi figured out these proportions, and we couldn’t be happier with the results!
Here’s the recipe:
Taco Salad
Serves 6-8 people
Ingredients:
2 lbs. ground beef
1 sm. onion, diced
4 cloves garlic (or 1 tsp. dry garlic powder)
2 tsp. salt
2 tsp. pepper
2 Tbsp. chili powder
2 tsp. dried oregano
1/2 tsp. cumin
1 sm. can tomato paste
1-1/4 c. tomato juice
To Serve:
Tortilla chips
Grated cheese
Salsa
Sour cream
Fresh lettuce, cut into strips
Fresh tomatoes, chopped (optional)
Guacamole or avocado slices (optional)
Fresh cilantro (optional)
Directions:
(1) Fry the ground beef with diced onion in about 1 Tbsp. oil until brown; drain the excess fat.
(2) Add spices and tomato products; bring to a boil and then reduce heat to low and simmer 30 minutes.
(3) Meanwhile, prep your toppings and set aside.
(4) When the meat is done, top chips with meat mixture and your desired toppings. Enjoy!
Tip! If you want to pre-mix a larger quantity of the dry spices in this recipe for a ready-to-use taco seasoning, use garlic powder in the quantity directed above, and then use 3 Tbsp. of the well-combined spice mixture for 2 lbs ground beef.
